  • 2 pounds Pork loin
  • 4 medium Yellow onions
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper

  • 4 small Garlic cloves
  • 2 tablespoons Butter
  • 1 cup Breadcrumbs
  • 1 cup Crispy fried onions
  • 1 cup Chicken broth
  • 1 tablespoon Dijon mustard
  • 0.5 cup Parmesan cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Thinly slice 3 of the yellow onions and mince the garlic cloves. Reserve 1 onion for the topping.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and 1/2 teaspoon of salt. Cook, stirring occasionally, for 20-25 minutes until caramelized and golden brown. Set aside to cool slightly.

Butterfly the pork loin: Place it fat side down on a cutting board. Use a sharp knife to carefully cut horizontally through the center of the meat, stopping about 1 inch from the edge to keep it attached. Open the pork like a book.
