Ingredients

  • 6 tablespoons Unsalted butter
  • 1 medium Yellow onion
  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.25 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 1 teaspoons Granulated sugar
  • 6 tablespoons Cold unsalted butter, cubed
  • 0.5 cups Sourdough starter discard
  • 0.5 cups Cold buttermilk

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

Peel and thinly slice the yellow onion. In a skillet, melt 6 tablespoons of unsalted butter over medium heat. Add the sliced onions and cook, stirring occasionally, for 20-25 minutes or until the onions are deep golden brown and caramelized. Remove from heat and let cool.

Step 3

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and granulated sugar.

Step 4

Add the cubed cold unsalted butter to the dry ingredients. Using a pastry cutter or your fingertips, work the butter into the flour mixture until the texture resembles coarse crumbs.

Step 5

Stir in the caramelized onions, ensuring they are evenly distributed throughout the mixture.

Step 6

In a separate small bowl, whisk together the sourdough starter discard and cold buttermilk. Pour this mixture into the dry ingredients, stirring just until combined. Do not overmix.

Step 7

Turn the dough out onto a lightly floured surface and pat it into a rectangle about 1 inch thick. Fold the dough in half, then pat it out again. Repeat this process twice more to create flaky layers.

Step 8

Cut the dough into rounds using a biscuit cutter (about 2.5 inches in diameter), or cut into squares with a knife. Gather any scraps and repeat until all the dough is used.

Step 9

Place the biscuits on the prepared baking sheet, spacing them about 1 inch apart.

Step 10

Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.

Step 11

Remove from the oven and let cool slightly on the baking sheet before serving. Enjoy warm or at room temperature!
