Ingredients

  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 6 medium yellow onions, thinly sliced
  • 1 teaspoon granulated sugar
  • 0.5 cup dry white wine
  • 4 cups vegetable stock
  • 1 teaspoon fresh thyme
  • 1 large bay leaf
  • 1 large ripe pear, peeled, cored, and diced
  • 0.25 cup heavy cream (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 cup Stilton cheese, crumbled
  • 4 slices crusty bread (for serving)

Directions

Step 1

Heat a large, heavy-bottomed pot over medium heat. Add the butter and olive oil, allowing the butter to melt completely.

Step 2

Add the thinly sliced onions to the pot and stir to coat them in the butter and oil. Cook for 10 minutes, stirring occasionally, until the onions begin to soften.

Step 3

Sprinkle the sugar over the onions and continue cooking, stirring frequently, for another 25-30 minutes until the onions are fully caramelized and golden brown. Be sure to keep an eye on them to prevent burning.

Step 4

Deglaze the pot by pouring in the dry white wine, scraping any browned bits from the bottom of the pot, and cooking for 2-3 minutes to let the alcohol evaporate.

Step 5

Stir in the vegetable stock, fresh thyme, and bay leaf. Bring the mixture to a gentle simmer.

Step 6

Add the diced pear to the pot and cook for an additional 10 minutes until the pear is tender.

Step 7

Optional: For a creamier soup, stir in the heavy cream and adjust the seasoning by adding salt and black pepper to taste.

Step 8

Remove the bay leaf and ladle the soup into bowls.

Step 9

Top each bowl with a generous sprinkle of crumbled Stilton cheese and serve with crusty bread on the side.
