In a large mixing bowl, combine the flour, sugar, salt, and yeast.
In a small saucepan, heat the milk and 3 tablespoons of butter until warm but not hot (around 110°F).
Pour the warm milk mixture into the flour mixture and add the egg. Stir until a soft dough forms.
Knead the dough on a lightly floured surface for 8-10 minutes, or until smooth and elastic. Alternatively, knead with a stand mixer fitted with a dough hook for 5-7 minutes.
Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
While the dough rises, prepare the caramelized onions. Slice the onions thinly.
In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 20-25 minutes, until the onions are golden brown and caramelized. Remove from heat and let cool.
Once the dough has risen, punch it down to release air bubbles and roll it out onto a floured surface into a rectangle about 12x9 inches.
Spread the caramelized onions evenly over the dough, leaving a 1-inch border along the edges.
Roll the dough tightly from one long side to the other, forming a log. Slice the log into 12 equal pieces.
Place the rolls into a greased 9x13 inch baking dish. Cover and let them rise again for about 30 minutes, or until puffy.
Preheat the oven to 375°F (190°C). Bake the rolls for 25-30 minutes, or until golden brown.
While the rolls bake, prepare the herb butter. Melt the remaining 2 tablespoons of butter in a small saucepan. Finely chop the parsley, thyme, and garlic, then stir them into the melted butter along with the sea salt.
