Ingredients

  • 1 cup Long-grain white rice
  • 2 cups Water
  • 2 medium Yellow onions
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Set aside to drain.

Step 2

Peel the yellow onions and slice them thinly into even half-moons.

Step 3

In a large skillet or sauté pan, heat the butter and olive oil over medium heat until melted.

Step 4

Add the sliced onions to the pan, stirring to coat them evenly in the butter and oil. Cook on medium-low heat, stirring occasionally, until the onions are golden brown and caramelized. This process takes 20-25 minutes. Adjust the heat as needed to prevent burning.

Step 5

While the onions caramelize, bring 2 cups of water to a boil in a medium saucepan. Add the drained rice and a pinch of salt, reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is fully cooked and the water is absorbed.

Step 6

Once the onions are caramelized, season them with salt and black pepper. Stir well to combine.

Step 7

Fluff the cooked rice with a fork and gently fold in the caramelized onions. Mix until the onions are evenly distributed throughout the rice.

Step 8

Remove the rice from the heat and garnish with freshly chopped parsley, if desired.

Step 9

Serve warm as a side dish or as part of your main meal. Enjoy!
