Slice the onions thinly into half-moons.
Heat a large skillet over medium-low heat. Add the olive oil and butter and let the butter melt completely.
Add the sliced onions to the skillet. Sprinkle with salt and sugar to enhance the caramelization process.
Cook the onions over medium-low heat, stirring every few minutes, until they are golden brown and caramelized. This should take 25-30 minutes. Adjust the heat slightly if the onions are browning too quickly.
Once the onions are caramelized, remove them from the skillet and set aside.
Clean the skillet or use an additional large skillet. Heat it over medium heat.
Place one tortilla in the skillet, then sprinkle about 1/2 cup of shredded cheese evenly over the surface.
Add 1/4 of the caramelized onions on top of the cheese. Sprinkle with cilantro if using.
Top with a second tortilla and press gently to adhere.
Cook for 2-3 minutes on one side until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla using a large spatula and cook for another 2-3 minutes on the other side.
Remove the quesadilla from the skillet and let it cool slightly before slicing into wedges.
Repeat with the remaining tortillas, cheese, and onions to make a total of 4 quesadillas.
Serve the quesadillas warm with sour cream and guacamole on the side, if desired.
