Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1 tablespoon Salt
  • 8 slices Thick-cut bacon
  • 2 medium Yellow onions
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Granulated sugar
  • 3 quarters cup Mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Apple cider vinegar
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh parsley

Directions

Step 1

Wash and peel the potatoes, then cut them into bite-sized chunks. Add them to a large pot and cover with cold water. Add 1 tablespoon of salt to the water.

Bring the pot to a boil over medium-high heat, then reduce to simmer. Cook until the potatoes are fork-tender, about 12-15 minutes. Drain and set aside to cool slightly.

While the potatoes are cooking, prepare the bacon. In a large skillet, cook the bacon over medium heat until crispy, about 8-10 minutes. Remove the bacon and place it on a paper towel-lined plate to drain. Once cool, crumble into pieces.
