  • 2 pounds Russet potatoes
  • 6 tablespoons Unsalted butter
  • 1 cup Whole milk
  • 2 large Yellow onions
  • 2 tablespoons Olive oil
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 teaspoon Fresh thyme leaves (optional)

Directions

Step 1

Peel the potatoes and chop them into evenly sized chunks, about 1.5 inches each. Rinse under cold water to remove excess starch.

Step 2

Place the potatoes in a large pot and cover with cold water. Add 1 teaspoon of salt to the water. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 15-20 minutes or until the potatoes are fork-tender.

Step 3

While the potatoes are cooking, prepare the caramelized onions. Peel and thinly slice the onions.

Step 4

In a medium skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for 20-25 minutes, or until the onions are golden brown and caramelized. Lower the heat slightly if the onions are browning too quickly.
