  • 4 cups Chicken or vegetable stock
  • 1 cup Heavy cream
  • 0.5 cup Sour cream
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1.5 teaspoons Fresh thyme leaves
  • 0.5 cup Cheddar cheese (optional, for topping)
  • 2 tablespoons Chopped chives (optional, for garnish)

Directions

Step 1

Peel and thinly slice the yellow onions.

Step 2

In a large pot or Dutch oven, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt.

Cook the onions, stirring frequently, for 25-30 minutes until they are golden brown and caramelized. Reduce the heat if they start to cook too quickly. Once caramelized, remove half of the onions and set them aside for topping later.
