Ingredients

  • 3 tablespoons olive oil
  • 2 large yellow onions
  • 300 grams green beans, trimmed
  • 250 grams cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 50 grams Parmesan cheese, grated
  • 3 tablespoons breadcrumbs

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Thinly slice the yellow onions. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 15-20 minutes until golden brown and caramelized. Remove from heat and set aside.

Step 3

Meanwhile, bring a pot of salted water to a boil. Add the trimmed green beans and blanch them for 3-4 minutes until tender-crisp. Drain and rinse under cold water to stop the cooking process.

Step 4

In a mixing bowl, combine the halved cherry tomatoes, blanched green beans, minced garlic, fresh thyme leaves, 1 tablespoon of olive oil, salt, and pepper. Toss until evenly coated.

Step 5

In a greased baking dish, spread the caramelized onions evenly across the bottom. Layer the green beans and cherry tomato mixture on top.

Step 6

In a small bowl, mix the breadcrumbs and grated Parmesan cheese. Sprinkle this mixture evenly over the vegetables in the baking dish.

Step 7

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the vegetables are bubbling slightly.

Step 8

Remove from the oven and let the dish cool for a few minutes before serving. Enjoy your Caramelized Onion Green Bean and Cherry Tomato Tian!
