Ingredients

  • 4 large (about 3 pounds) Russet potatoes
  • 2 large Yellow onion
  • 6 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 cup Heavy cream
  • 3 ounces Gorgonzola cheese, crumbled
  • 0.5 cup Milk
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh parsley (optional, for garnish)

Directions

Step 1

Peel and chop the potatoes into 1-inch cubes. Place them in a large pot and cover with cold water. Add 1 teaspoon of salt to the water.

Bring the pot of potatoes to a boil over high heat, then reduce the heat to medium and simmer for 15-20 minutes, or until the potatoes are fork-tender.
