Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 large yellow onions, thinly sliced
  • 8 large eggs
  • 0.25 cup heavy cream
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground black pepper
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat olive oil and butter in a large, ovenproof skillet over medium heat.

Step 2

Add the sliced onions with a pinch of salt and cook, stirring occasionally, for 25-30 minutes until they are deep golden brown and caramelized. Reduce the heat to medium-low if they begin to brown too quickly.

Step 3

Preheat your oven to 375°F (190°C).

Step 4

While the onions cook, whisk the eggs, heavy cream, salt, and pepper together in a large bowl.

Step 5

Once the onions are caramelized, spread them evenly in the skillet and pour the egg mixture over the top. Gently stir to distribute the onions evenly.

Step 6

Sprinkle the grated Parmesan cheese on top.

Step 7

Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is set and the center is no longer jiggly.

Step 8

Remove from the oven and let cool slightly. Garnish with fresh parsley if desired, slice into wedges, and serve warm or at room temperature.
