Ingredients

  • 3 large Yellow onions
  • 2 tablespoons Olive oil
  • 3 tablespoons Brown sugar
  • 3 cloves Garlic
  • 2 tablespoons Tomato paste
  • 1 cup Ketchup
  • 3 tablespoons Apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Ground mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Water

Directions

Step 1

Peel and thinly slice the yellow onions.

Step 2

In a large skillet, heat olive oil over medium heat. Add the sliced onions and a pinch of salt.

Step 3

Cook the onions, stirring occasionally, for about 25-30 minutes until they become golden brown and fully caramelized. Lower the heat if necessary to avoid burning.

Step 4

While the onions cook, mince the garlic.

Step 5

Once the onions are caramelized, add the garlic to the skillet and cook for 1-2 minutes until fragrant.

Step 6

Stir in the brown sugar and tomato paste, cooking for an additional 2 minutes to create a deep flavor base.

Step 7

Add the ketchup, apple cider vinegar, Worcestershire sauce, smoked paprika, chili powder, ground mustard, salt, black pepper, and water. Stir until well combined.

Step 8

Lower the heat to a simmer and cook the BBQ sauce for 15-20 minutes, stirring occasionally, until it thickens to your desired consistency.

Step 9

Taste and adjust seasonings if necessary. If you prefer a smoother sauce, blend the mixture using an immersion blender or regular blender.

Step 10

Allow the sauce to cool slightly before serving. Store leftovers in an airtight container in the refrigerator for up to 1 week.
