Ingredients

  • 2 medium sweet potatoes
  • 2 large yellow onions
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic

  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 3 tablespoons water or vegetable broth

Directions

Step 1

Peel and slice the sweet potatoes into 1/4-inch thick rounds. Set aside.

Step 2

Peel and thinly slice the onions into half-moons.

Step 3

Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Add the sliced onions to the skillet. Stir to coat them in the oil and butter. Reduce the heat to medium-low and cook for 15-20 minutes, stirring occasionally, until the onions become golden brown and caramelized.
