Ingredients

  • 2 pounds Russet potatoes
  • 6 tablespoons Unsalted butter
  • 2 medium Yellow onions
  • 1 tablespoon Olive oil
  • 1 cup Heavy cream
  • 2 tablespoons Prepared horseradish
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh chives, chopped (optional garnish)

Directions

Step 1

Peel and cube the potatoes into 1-inch pieces. Place them in a large pot and cover with cold water, adding 1 teaspoon of salt to the water.

Bring the pot of potatoes to a boil over medium-high heat. Reduce the heat to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.
