Ingredients

  • 6 large eggs
  • 1 medium yellow onion
  • 1 tablespoon unsalted butter

  • 1 teaspoon Dijon mustard
  • 2 tablespoons, chopped fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon sugar

Directions

Step 1

Place the eggs in a medium-sized pot and cover with cold water. Bring to a boil over medium-high heat, then lower the heat to a simmer and cook for 10 minutes.

Once cooked, transfer the eggs to an ice bath to cool for 5 minutes. Peel the eggs and chop them into small pieces. Set aside.

While the eggs are cooling, thinly slice the yellow onion.
