Ingredients

  • 2 medium Yellow onions
  • 4 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 4 large Russet potatoes
  • 1 cup Heavy cream
  • 0.5 cup Milk
  • 2 tablespoons Coarse grain mustard
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper

Directions

Step 1

Peel and thinly slice the yellow onions.

Step 2

In a large skillet, heat 2 tablespoons of butter and the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for 25-30 minutes until the onions become golden brown and caramelized. Lower the heat if needed to prevent burning. Once caramelized, remove from heat and set aside.
