Ingredients

  • 1 package (about 2 sheets) puff pastry sheet
  • 2 tablespoons unsalted butter
  • 2 large yellow onion
  • 1 teaspoon brown sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 200 grams Brie cheese
  • 1 large egg
  • 1 tablespoon water
  • 1 teaspoon fresh thyme leaves
  • 2 teaspoons honey (optional)

Directions

Step 1

Remove the puff pastry from the freezer and allow it to thaw according to the package instructions.

Step 2

Peel and thinly slice the onions.

Step 3

In a large skillet, melt the butter over medium heat. Add the sliced onions, salt, and pepper. Cook, stirring frequently, for about 20-25 minutes or until the onions are golden brown and caramelized. Stir in the brown sugar during the last 5 minutes of cooking. Remove from heat and set aside.

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

On a lightly floured surface, unfold the puff pastry sheets and roll each one out slightly. Cut each sheet into 8 equal squares.

Place the puff pastry squares onto the prepared baking sheet, leaving a small space between each square.
