  • 3 pounds beef chuck roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 cup cola
  • 1 cup beef broth
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon red wine vinegar
  • 4 fresh thyme sprigs
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Pat the chuck roast dry with paper towels and season all sides evenly with salt, black pepper, and smoked paprika.

Step 3

In a large oven-safe Dutch oven, heat olive oil over medium-high heat. Once hot, sear the roast on all sides until deeply browned, about 3–4 minutes per side. Remove the roast and set aside.

Lower the heat to medium and add the diced onion to the same pot. Sauté until softened, about 3 minutes. Stir in the minced garlic and cook for an additional 30 seconds.
