Ingredients

  • 4 tablespoons unsalted butter
  • 6 medium, thinly sliced yellow onions
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1 cup dry white wine
  • 6 cups beef broth
  • 1 bay leaf
  • 2 sprigs fresh thyme
  • 1 loaf, sliced into rounds baguette
  • 1 cup, grated gruyere cheese
  • 0.5 teaspoon, freshly ground pepper

Directions

Step 1

In a large pot or Dutch oven, melt the butter over medium heat until fully melted.

Step 2

Add the thinly sliced onions to the pot, followed by the sugar and salt. Stir well to combine.

Step 3

Cook the onions over low to medium heat, stirring regularly, for 30-40 minutes until they are deeply golden and caramelised. This process requires patience to bring out the natural sweetness of the onions.

Step 4

Once the onions are caramelised, deglaze the pot by adding the white wine. Scrape up any browned bits stuck to the bottom of the pot with a wooden spoon. Let the wine reduce by half, about 5 minutes.

Step 5

Add the beef broth, bay leaf, and thyme to the pot. Bring to a gentle simmer and cook for an additional 20 minutes to let the flavors meld. Season with black pepper to taste.

Step 6

While the soup is simmering, preheat the oven broiler to high.

Step 7

Place the baguette slices on a baking sheet and toast them under the broiler until lightly golden on both sides, about 1-2 minutes per side.

Step 8

Ladle the soup into oven-safe bowls and place a toasted baguette slice on top of each serving. Sprinkle a generous amount of grated Gruyere cheese over the bread.

Step 9

Place the bowls on a baking sheet and broil in the oven for 2-3 minutes, or until the cheese is melted and bubbly.

Step 10

Carefully remove the hot bowls from the oven, garnish with additional thyme if desired, and serve immediately.
