Ingredients

  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 3 large Yellow onions
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 3 cloves Garlic
  • 4 medium Potatoes
  • 6 cups Chicken or vegetable broth
  • 1.5 cups Cooked ham
  • 0.5 cups Heavy cream
  • 1 teaspoon Dried thyme
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley (optional for garnish)

Directions

Step 1

Peel and thinly slice the yellow onions. Mince the garlic, and set these aside.

Step 2

In a large pot or Dutch oven, heat the butter and olive oil over medium heat until the butter has melted.

Add the sliced onions along with the salt and sugar. Cook over medium-low heat, stirring occasionally, for 20-25 minutes until the onions are deep golden brown and caramelised.

While the onions are caramelising, peel and dice the potatoes into 1-inch cubes.

Once the onions are caramelised, stir in the minced garlic and cook for 1 minute until fragrant.
