Ingredients

  • 3 pieces Large eggs
  • 2 tablespoons Milk
  • 1 tablespoon Butter
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion
  • 1 teaspoon Sugar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 50 grams Goat cheese
  • 1 tablespoon Fresh parsley (optional)

Directions

Step 1

Peel and thinly slice the yellow onion.

Step 2

Heat a skillet over medium heat. Add the olive oil and 1 teaspoon of the butter.

Step 3

Once the butter has melted, add the sliced onions and a pinch of salt. Stir frequently for 8-10 minutes, until the onions soften and begin to caramelise.

Sprinkle 1 teaspoon of sugar over the onions and cook for another 5 minutes, stirring occasionally, until the onions are golden brown. Set aside.

In a mixing bowl, whisk together the eggs, milk, remaining salt, and black pepper until well combined and slightly frothy.
