Ingredients

  • 2 sheets puff pastry sheets
  • 3 large yellow onions
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon brown sugar
  • 2 teaspoons balsamic vinegar
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 150 grams goat cheese
  • 1 tablespoon fresh thyme leaves
  • 1 large egg
  • 1 tablespoon milk

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

Peel and thinly slice the yellow onions.

Step 3

In a large skillet, heat the butter and olive oil over medium heat. Once melted, add the sliced onions and cook for about 10 minutes, stirring occasionally, until softened.

Step 4

Sprinkle the brown sugar over the onions and pour in the balsamic vinegar. Stir to combine and cook for an additional 15 minutes until the onions are deeply caramelised. Season with salt and black pepper, then set aside to cool.

Step 5

Roll out the puff pastry sheets on a lightly floured surface and cut into 6 equal-sized rectangles (or circles, if you prefer). Place them on the prepared baking tray.

Score a 1 cm border around the edge of each piece of puff pastry, being careful not to cut all the way through. This helps the edges to puff up during baking.

Step 7

In a small bowl, beat the egg and milk together to create an egg wash. Brush the borders of each pastry with the egg wash.

Spread a layer of goat cheese within the scored borders of each pastry rectangle. Divide the caramelised onions evenly between the tarts and sprinkle with fresh thyme leaves.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and puffed.

Remove the tarts from the oven and allow them to cool slightly before serving. Garnish with additional thyme if desired.
