Ingredients

  • 200 grams Couscous
  • 2 tablespoons Olive oil
  • 1 piece Large onion
  • 1 teaspoon Salt
  • 1 teaspoon Brown sugar
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Ground paprika
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Dried thyme
  • 2 tablespoons Fresh parsley (optional, for garnish)
  • 240 milliliters Vegetable broth or water

Directions

Step 1

Peel and thinly slice the onion into even slices for consistent caramelisation.

Step 2

Heat 1 tablespoon of olive oil in a large skillet or frying pan over medium-low heat.

Step 3

Add the sliced onion to the skillet and sprinkle with a pinch of salt. Stir occasionally until the onion becomes soft and golden brown, about 15-20 minutes.

Step 4

When the onion begins to caramelise, sprinkle in the brown sugar and stir well. Cook for an additional 2-3 minutes until the sugar melts and coats the onions. Remove from heat and set aside.

Step 5

In a medium saucepan, bring the vegetable broth or water to a boil. Add 1 tablespoon of olive oil and a pinch of salt.

Step 6

Stir in the couscous, cover the saucepan, and remove it from the heat. Let it sit for 5 minutes to allow the couscous to absorb the liquid fully.

Step 7

Fluff the couscous with a fork and stir in the ground cumin, paprika, garlic powder, and dried thyme.

Step 8

Chop the caramelised onions into small pieces and mix them into the couscous to evenly distribute the flavors.

Step 9

Taste and adjust seasoning with additional salt if needed.

Step 10

Serve warm and garnish with freshly chopped parsley if desired.
