Ingredients

  • 500 g Chicken thighs (boneless, skinless)
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 tbsp Cornstarch
  • 3 tbsp Vegetable oil
  • 4 cloves Garlic (minced)
  • 1 tsp Red chilli flakes
  • 3 tbsp Honey
  • 3 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 2 tbsp Brown sugar
  • 60 ml Water
  • 3 stalks Spring onions (sliced for garnish)
  • 1 tbsp Sesame seeds (optional for garnish)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and season with salt and ground black pepper.

Step 2

Sprinkle the cornstarch over the chicken pieces, ensuring they are evenly coated.

Step 3

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the chicken pieces in batches, cooking for 4-5 minutes on each side until golden brown and cooked through. Remove the cooked chicken from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Reduce the heat to medium and add the minced garlic. Sauté for 30 seconds until fragrant.

Add the red chilli flakes, honey, soy sauce, rice vinegar, brown sugar, and water to the skillet. Stir well to combine and let it simmer for about 3-4 minutes until the sauce begins to thicken.

Return the cooked chicken to the skillet, tossing the pieces in the sauce until they are well coated. Continue to cook for another 2-3 minutes, allowing the chicken to caramelise and absorb the flavours.

Step 7

Remove the skillet from heat. Garnish with sliced spring onions and sesame seeds (if using).
