Ingredients

  • 4 pieces Tangelos or oranges
  • 200 grams Granulated sugar
  • 60 ml Water
  • 20 grams Unsalted butter
  • 1 pinch Sea salt
  • 1 teaspoon Tangelo or orange zest
  • 4 pieces Fresh mint leaves (optional, for garnish)

Directions

Step 1

Peel the tangelos or oranges, removing as much of the white pith as possible. Slice them crosswise into 0.5 cm (1/4 inch) thick rounds.

Step 2

In a medium, heavy-bottomed saucepan, combine the granulated sugar and water over medium heat. Stir gently until the sugar dissolves completely.

Step 3

Once the sugar has dissolved, stop stirring and allow the mixture to come to a boil. Cook until the syrup turns into a medium amber caramel, swirling the pan occasionally to ensure even coloring. This will take about 5-7 minutes.

Step 4

Remove the saucepan from the heat and carefully stir in the unsalted butter until fully incorporated. Be cautious, as the caramel may bubble vigorously.

Step 5

Add the pinch of sea salt and tangelo or orange zest to the caramel, stirring to combine.

Step 6

Arrange the sliced tangelos or oranges on a serving plate, slightly overlapping if desired.

Step 7

Drizzle the hot caramel sauce evenly over the citrus slices, ensuring each piece is coated.

Step 8

Allow the caramel to cool and harden slightly for 1-2 minutes. Garnish with fresh mint leaves, if using, and serve immediately.
