Ingredients

  • 200 grams granulated sugar
  • 80 ml water (for sugar)
  • 45 grams butter
  • 120 ml heavy cream
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Directions

Step 1

In a medium, heavy-bottom saucepan, combine the granulated sugar and water. Stir gently to moisten the sugar, being careful not to splash sugar crystals onto the sides of the pan.

Place the saucepan over medium heat and bring the mixture to a boil without stirring. Allow the sugar to dissolve and then darken into a deep amber color, swirling the pan occasionally to ensure even caramelization. This should take approximately 10 minutes.

Step 3

Once the mixture reaches a rich amber hue, immediately remove the pan from heat to prevent burning.

Step 4

Carefully add the butter to the caramel. The mixture will bubble vigorously. Stir constantly until the butter is fully melted and incorporated.

Slowly pour in the heavy cream while stirring continuously. Be cautious as the mixture will bubble and steam intensely. Continue stirring until the cream is fully combined and the syrup is smooth.
