Ingredients

  • 170 grams unsalted butter
  • 200 grams light brown sugar
  • 100 grams granulated sugar
  • 2 medium eggs
  • 2 teaspoons vanilla extract
  • 280 grams all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoons fine sea salt
  • 180 grams semi-sweet chocolate chunks
  • 200 grams granulated sugar (for caramel)
  • 120 milliliters heavy cream (for caramel)
  • 45 grams unsalted butter (for caramel)
  • 0.25 teaspoons fine sea salt (for caramel)

Directions

Step 1

Preheat your oven to 175°C (350°F). Lightly grease a 9x13-inch baking dish with butter or nonstick spray and line it with parchment paper, leaving a bit of overhang for easy removal.

Step 2

In a large saucepan over medium heat, melt the butter. Once melted, remove from heat and whisk in the brown sugar and granulated sugar until smooth.

Step 3

Let the mixture cool slightly before adding the eggs, one at a time, whisking well after each addition. Stir in the vanilla extract.

Step 4

In a separate bowl, combine the all-purpose flour, baking soda, and salt. Gradually add these dry ingredients to the wet mixture, stirring until just combined.

Step 5

Fold in the semi-sweet chocolate chunks, ensuring they are evenly distributed.

Step 6

To make the caramel sauce, heat the granulated sugar in a medium saucepan over medium heat, stirring continuously, until it melts into a golden liquid. Reduce heat to low and carefully whisk in the heavy cream (it will bubble up).

Step 7

Once combined, stir in the butter and fine sea salt until smooth. Remove from heat and let it cool for 5-10 minutes.

Step 8

Spread half of the cookie dough evenly into the prepared baking dish. Drizzle half of the caramel sauce over the layer of dough, then use a knife to gently swirl the caramel through the dough.

Step 9

Spread the remaining cookie dough evenly on top and repeat the process with the remaining caramel sauce, swirling it gently.

Step 10

Bake in the preheated oven for 30-35 minutes, or until the top is golden and a toothpick inserted comes out with a few moist crumbs.

Step 11

Allow the bars to cool completely in the pan. Once cooled, use the parchment paper overhang to lift the bars out of the pan and onto a cutting board. Slice into 12 even hunks and enjoy!
