Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking dish with parchment paper, leaving overhang for easy removal later.
In a medium-sized mixing bowl, cream together 1 cup of unsalted butter, 1 cup of brown sugar, and 1/2 cup of granulated sugar until light and fluffy.
Mix in 2 teaspoons of vanilla extract.
In another bowl, whisk together 2 cups of all-purpose flour, 2 cups of old-fashioned oats, 1 teaspoon of baking powder, and 1/2 teaspoon of salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. The mixture will be crumbly.
