Ingredients

  • 4 ripe pears
  • 110 grams unsalted butter
  • 150 grams brown sugar
  • 100 grams granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 240 milliliters whole milk
  • 150 grams all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons salt
  • 180 milliliters heavy cream

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 9-inch (23 cm) round baking dish or a similarly sized dish.

Step 2

Peel and core the pears, then thinly slice them. Arrange the slices evenly at the bottom of the prepared baking dish.

Step 3

In a medium saucepan, melt 50 grams of the unsalted butter over medium heat. Add 100 grams of brown sugar and stir until the sugar is dissolved and a smooth caramel sauce forms. Pour this caramel sauce over the sliced pears, spreading it evenly.

Step 4

In a large mixing bowl, cream together the remaining 60 grams of butter and the granulated sugar until light and fluffy.

Step 5

Beat in the eggs one at a time, followed by the vanilla extract.

Step 6

In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.

Step 7

Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients, mixing just until everything is combined. Avoid overmixing.

Step 8

Carefully pour the batter over the pears and caramel sauce in the baking dish, using a spatula to smooth the top.

Step 9

Bake in the preheated oven for 40-45 minutes, or until the pudding is golden and a toothpick inserted into the center comes out clean.

Step 10

While the pudding bakes, make the caramel topping: In a small saucepan over medium heat, combine the remaining 50 grams of brown sugar, heavy cream, and 20 grams of butter. Cook, stirring constantly, until the mixture thickens into a pourable caramel sauce (about 5 minutes). Remove from heat.

Step 11

Allow the pudding to cool slightly after baking, then drizzle the warm caramel sauce over the top.

Step 12

Serve the caramel pear pudding warm with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.
