  • 200 grams granulated sugar
  • 80 ml water
  • 300 ml heavy cream
  • 60 grams unsalted butter
  • 1 pinch sea salt
  • 1 tablespoon gelatin
  • 60 ml cold water
  • 1 teaspoon vanilla extract
  • 250 ml whipping cream

Directions

Step 1

In a small bowl, sprinkle the gelatin over 60 ml of cold water and let it bloom for about 5 minutes.

Step 2

In a medium-sized saucepan, combine 200 grams granulated sugar and 80 ml of water. Heat over medium heat, stirring gently until the sugar dissolves.

Step 3

Increase heat to medium-high and bring the mixture to a boil without stirring. Cook until the sugar turns a deep amber color, watching closely to prevent burning, about 8-10 minutes.

Step 4

Remove the saucepan from the heat and carefully whisk in 300 ml of heavy cream. Be cautious as the mixture will bubble up rapidly.
