  • 250 grams All-purpose flour
  • 170 grams Unsalted butter (cold, diced)

  • 60 ml Cold water
  • 150 grams Bittersweet chocolate (chopped)
  • 100 grams Caramel sauce
  • 50 grams Crystallized ginger (finely chopped)
  • 15 ml Milk (for brushing)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and granulated sugar.

Step 2

Add the cold diced butter to the flour mixture and use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.

Gradually add cold water, one tablespoon at a time, until the dough just comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
