Preheat your oven to 180°C (350°F) and line a 9-inch square baking pan with parchment paper for easy removal.
In a mixing bowl, combine 150 grams of unsalted butter (softened), 200 grams of all-purpose flour, and 50 grams of granulated sugar. Mix until it forms a crumbly dough.
Press the dough evenly into the prepared baking pan to form a base. Prick lightly with a fork to prevent bubbling and bake for 20 minutes or until lightly golden. Set aside to cool.
To make the caramel layer, combine 100 grams of light brown sugar, 2 tablespoons of golden syrup, and 150 grams of unsalted butter in a medium saucepan over low heat. Stir until the sugar dissolves.
Add 400 grams of sweetened condensed milk to the saucepan. Increase the heat slightly and stir continuously for 6–8 minutes until the mixture thickens and turns a golden caramel color.
Pour the caramel over the cooled shortbread base and spread evenly. Allow it to cool completely and set in the refrigerator for about 30 minutes.
Melt 200 grams of dark chocolate in a heatproof bowl set over a pot of simmering water (double boiler method) or in the microwave in 30-second intervals, stirring between each interval.
Stir 2 tablespoons of heavy cream into the melted chocolate to make it smooth and glossy.
Pour the melted chocolate over the chilled caramel layer and spread evenly. Sprinkle a pinch of sea salt over the top for added flavor (optional).
Return the tray to the refrigerator and allow the chocolate layer to set completely, about 1 hour.
