Ingredients

  • 5 medium Yellow onions
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 4 minced Garlic cloves
  • 1 teaspoon Granulated sugar
  • 6 cups Beef broth
  • 1 cup Dry white wine
  • 1 Bay leaf
  • 1 teaspoon Thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 loaf French baguette
  • 2 tablespoons Parmesan cheese
  • 2 cups Mozzarella cheese

Directions

Step 1

Peel and thinly slice the yellow onions. Set aside.

Step 2

Heat butter and olive oil in a large stockpot over medium heat until melted.

Step 3

Add the sliced onions to the pot and sauté for about 10 minutes, stirring occasionally, until softened.

Step 4

Add the minced garlic and granulated sugar, and continue cooking for another 20-25 minutes, stirring frequently, until the onions become deeply golden and caramelized.

Step 5

Deglaze the pot by adding the dry white wine, scraping the bottom of the pot to release any browned bits.

Step 6

Pour in the beef broth, add the bay leaf, thyme, salt, and black pepper. Stir and bring the mixture to a gentle simmer.

Step 7

Reduce heat to low and let the soup simmer for 30 minutes, allowing the flavors to meld. Discard the bay leaf before serving.

Step 8

While the soup simmers, preheat your oven to 375°F (190°C).

Step 9

Slice the French baguette into 1/2-inch thick slices and arrange them on a baking sheet.

Step 10

Brush each slice with olive oil and sprinkle grated Parmesan cheese on top. Bake for 10-12 minutes, or until golden and crisp.

Step 11

To assemble, ladle the onion soup into oven-safe bowls and place one or two croutons on top.

Step 12

Sprinkle generous amounts of mozzarella cheese over the croutons and place the bowls under the broiler for 3-5 minutes, or until the cheese is bubbling and golden.

Step 13

Carefully remove the hot bowls and serve immediately.
