Ingredients

  • 400 grams linguine pasta
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 units garlic cloves, minced
  • 0.5 teaspoons red chili flakes
  • 300 grams raw shrimp, peeled and deveined
  • 250 grams fresh scallops
  • 120 milliliters dry white wine
  • 2 tablespoons lemon juice
  • 180 milliliters heavy cream
  • 50 grams grated Parmesan cheese
  • 3 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the linguine until al dente according to package instructions. Reserve 1 cup of pasta water and drain the rest. Set the linguine aside.

Step 2

Heat the olive oil and butter in a large skillet over medium heat until the butter is melted.

Step 3

Add the minced garlic and red chili flakes to the skillet. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 4

Add the shrimp and scallops to the skillet. Cook for 2-3 minutes per side until the shrimp turn pink and opaque and the scallops are golden brown. Remove the seafood from the pan and set aside.

Step 5

Deglaze the skillet with the white wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes to reduce slightly.

Step 6

Stir in the lemon juice and heavy cream, then season with salt and black pepper. Let the sauce simmer for 3-4 minutes until slightly thickened.

Step 7

Add the cooked linguine to the skillet and toss to coat it in the sauce. If the sauce is too thick, use some of the reserved pasta water to loosen it until it reaches your desired consistency.

Step 8

Return the cooked shrimp and scallops to the skillet and gently toss them with the linguine.

Step 9

Stir in the grated Parmesan cheese and 2 tablespoons of the chopped parsley. Cook for another 2 minutes to warm everything through.

Step 10

Serve the linguine garnished with the remaining 1 tablespoon of parsley and an extra sprinkle of Parmesan cheese, if desired. Enjoy!
