Ingredients

  • 3 large red bell peppers (capsicum)
  • 2 tablespoons olive oil
  • 2 large garlic cloves
  • 1 tablespoon lemon juice
  • 2 tablespoons tahini
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cumin powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon fresh parsley (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and dry the red bell peppers. Place them on a baking tray lined with parchment paper.

Step 3

Roast the peppers in the preheated oven for approximately 20 minutes, turning them occasionally, until the skin is charred and blistered.

Step 4

Remove the roasted peppers from the oven and place them in a heat-proof bowl. Cover the bowl tightly with plastic wrap and let the peppers steam for 10 minutes to loosen the skins.

Step 5

Once cooled, peel off the charred skin from the peppers and discard the seeds and stems.

In a food processor or blender, combine the peeled roasted peppers, olive oil, garlic cloves, lemon juice, tahini, smoked paprika, cumin powder, salt, and black pepper.
