Ingredients

  • 1 cup polenta
  • 3 cups water
  • 1 teaspoon salt
  • 1 cup parmesan cheese
  • 2 tablespoons olive oil
  • 4 slices fresh mozzarella
  • 1 large tomato
  • 10 leaves fresh basil leaves
  • 2 tablespoons balsamic glaze
  • 1 cup arugula
  • 4 brioche buns
  • 0.5 teaspoon black pepper

Directions

Step 1

In a medium saucepan, bring 3 cups of water and 1 teaspoon of salt to a boil over medium heat. Gradually whisk in the polenta, stirring constantly to prevent lumps.

Step 2

Reduce the heat to low and cook the polenta, stirring frequently, for about 20 minutes until thick and creamy.

Step 3

Stir in the grated parmesan cheese and 1 tablespoon of olive oil. Remove from heat and let it cool slightly.

Line a baking sheet with parchment paper. Pour the cooked polenta onto the parchment paper and spread it out to a 1/2-inch-thick layer. Let it cool and firm up for 20-30 minutes.

Once the polenta is firm, use a round cookie cutter or glass to cut out 4 polenta patties roughly the size of your brioche buns.

Heat the remaining 1 tablespoon of olive oil in a non-stick skillet over medium heat. Fry the polenta patties for 3-4 minutes on each side until golden and slightly crispy. Set aside.
