Ingredients

  • 225 grams Dark chocolate (finely chopped)
  • 120 ml Heavy cream
  • 2 teaspoons Instant espresso powder
  • 30 grams Unsalted butter (cut into small pieces)
  • 1 teaspoon Vanilla extract
  • 3 tablespoons Cocoa powder
  • 50 grams White chocolate (optional, for garnish)

Directions

Step 1

Place the finely chopped dark chocolate in a medium heatproof bowl and set aside.

Step 2

In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil.

Step 3

Remove the cream from the heat and stir in the instant espresso powder until fully dissolved.

Step 4

Pour the hot cream mixture over the chopped chocolate. Allow it to sit for 2 minutes to melt the chocolate.

Gently stir the mixture with a spatula until smooth and glossy. Then, add the butter and vanilla extract, and stir until fully incorporated.
