Ingredients

  • 0.5 cup Unsalted butter (softened)
  • 0.25 cup Granulated sugar
  • 0.25 cup Unsweetened cocoa powder
  • 1 Egg (lightly beaten)
  • 1.75 cups Graham cracker crumbs
  • 0.75 cup Shredded sweetened coconut
  • 0.5 cup Chopped nuts (walnuts or pecans)
  • 0.5 cup Unsalted butter (softened - for the filling)
  • 2 teaspoons Espresso powder
  • 2 tablespoons Boiling water
  • 2 cups Powdered sugar
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Heavy cream or milk
  • 4 ounces Bittersweet or semisweet chocolate (chopped)
  • 1 tablespoon Unsalted butter (for the topping)

Directions

Step 1

Prepare the base layer: In a medium saucepan over low heat, melt 1/2 cup unsalted butter. Stir in the granulated sugar and cocoa powder until smooth.

Step 2

Remove the pan from heat and quickly whisk in the beaten egg. The heat will cook the egg and thicken the mixture. Stir until fully incorporated.

Step 3

Add the graham cracker crumbs, shredded coconut, and chopped nuts to the saucepan. Mix until well combined.

Step 4

Press the mixture firmly and evenly into the bottom of an ungreased 8x8-inch pan. Chill in the refrigerator for 15-20 minutes until firm.

Step 5

Prepare the cappuccino filling: Dissolve the espresso powder in boiling water and let it cool slightly.

Step 6

In a medium bowl, cream 1/2 cup unsalted butter until light and fluffy. Gradually beat in the powdered sugar, dissolved espresso, vanilla extract, and heavy cream until smooth and spreadable.

Step 7

Spread the cappuccino filling evenly over the chilled base layer. Return the pan to the refrigerator for another 15-20 minutes to set.

Step 8

Prepare the chocolate topping: In a heatproof bowl set over a saucepan of simmering water, melt the chopped chocolate and 1 tablespoon of butter, stirring until smooth.

Step 9

Let the chocolate cool slightly, then pour it over the cappuccino filling, spreading it evenly with an offset spatula.

Step 10

Refrigerate the bars for at least 1 hour or until the chocolate topping is firm.

Step 11

Once set, use a sharp knife to cut the bars into 16 squares. For clean edges, warm the knife slightly under hot water and wipe it dry between cuts.

Step 12

Store the Cappuccino Nanaimo Bars in an airtight container in the refrigerator for up to one week. Serve chilled or at room temperature.
