Ingredients

  • 240 ml Heavy cream
  • 120 ml Milk
  • 2 tsp Instant espresso powder
  • 50 g Granulated sugar
  • 1 tsp Unflavored gelatin powder
  • 2 tbsp Cold water
  • 1 tsp Vanilla extract
  • 1 tbsp Cocoa powder (for dusting)

Directions

Step 1

In a small bowl, add the cold water and sprinkle the unflavored gelatin over it. Let it bloom for about 5 minutes.

Step 2

In a medium saucepan over medium heat, combine the milk, instant espresso powder, and granulated sugar. Stir until the sugar and espresso powder have dissolved completely. Do not let the mixture boil.

Step 3

Add the bloomed gelatin to the warm milk mixture and whisk until the gelatin dissolves completely. Remove the saucepan from heat and let it cool to room temperature.

Step 4

In a large mixing bowl, whip the heavy cream to stiff peaks using a hand or stand mixer.

Step 5

Gently fold the cooled milk-espresso mixture into the whipped cream. Add the vanilla extract and continue folding until evenly combined and smooth.

Step 6

Spoon the mixture into individual serving glasses or ramekins. Smooth the tops and lightly cover with plastic wrap.

Step 7

Refrigerate for at least 3 hours or until set.

Before serving, dust the top of each portion with cocoa powder for a classic cappuccino look.
