Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves minced garlic

  • 2 pieces chipotle peppers in adobo sauce
  • 2 tablespoons adobo sauce
  • 1 14-ounce can diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 tablespoon dark brown sugar
  • 1 tablespoon lime juice
  • 2 tablespoons cilantro, chopped (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes per side until golden brown. Remove from the skillet and set aside.
