Ingredients

  • 1 cup Short-grain white rice
  • 2 cups Water
  • 4 cups Whole milk
  • 0.5 cup Granulated sugar
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Ground cinnamon
  • 1 teaspoon Vanilla extract
  • 2 large Egg yolks
  • 1 tablespoon Unsalted butter
  • 0.5 cup Raisins (optional)
  • 0 Ground nutmeg (for garnish, optional)

Directions

Step 1

In a medium saucepan, combine the rice and water. Bring to a boil over medium-high heat, then reduce the heat to low and cover. Simmer for 10 minutes or until most of the water is absorbed.

Step 2

Add the milk, sugar, salt, and cinnamon to the saucepan with the rice. Stir well to combine. Increase the heat to medium-low and cook uncovered, stirring often, for 30-35 minutes, or until the mixture thickens and the rice is tender.

Step 3

In a small mixing bowl, whisk together the egg yolks and vanilla extract. Gradually add a spoonful of the hot rice mixture to the egg yolks while whisking constantly to temper the eggs.

Step 4

Slowly pour the tempered egg mixture back into the saucepan with the rice pudding while stirring continuously. Cook over low heat for another 2-3 minutes until the pudding reaches a creamy consistency.

Step 5

Remove the saucepan from the heat. Stir in the butter and raisins (if using) until fully incorporated.

Step 6

Transfer the rice pudding to serving dishes or a large bowl. Allow to cool slightly before serving warm, or refrigerate for at least 2 hours to serve chilled.

Step 7

Garnish with a sprinkle of ground nutmeg before serving, if desired.
