Ingredients

  • 3 tablespoons olive oil
  • 3 pieces garlic cloves
  • 1 cup sun-dried tomatoes (in oil, drained)
  • 3 tablespoons capers (drained and rinsed)
  • 0.5 teaspoons crushed red pepper flakes
  • 2 tablespoons tomato paste
  • 1 cup vegetable or chicken broth
  • 1 teaspoons dried oregano
  • 0.5 teaspoons salt
  • 0.25 teaspoons freshly ground black pepper
  • 0.25 cups fresh basil leaves (optional, for garnish)
  • 12 ounces pasta of choice (cooked according to package instructions)

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Finely chop the garlic cloves and sauté them in the oil until fragrant, about 1-2 minutes. Be careful not to burn them.

Step 3

Roughly chop the sun-dried tomatoes and add them to the skillet along with the capers. Stir and cook for 2-3 minutes.

Step 4

Stir in the crushed red pepper flakes and tomato paste. Cook for 1 minute, allowing the flavors to meld.

Step 5

Pour in the broth and stir well, scraping any bits off the bottom of the skillet. Bring the mixture to a simmer.

Step 6

Add the dried oregano, salt, and black pepper. Let the sauce simmer for 5-7 minutes, stirring occasionally, until slightly thickened.

Step 7

Taste and adjust seasoning if needed.

Step 8

Toss the sauce with cooked pasta. If the sauce seems too thick, add a splash of the reserved pasta water to loosen it up.

Step 9

Serve immediately, garnished with fresh basil leaves if desired.
