Ingredients

  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 medium, finely chopped Shallot
  • 2 cloves, minced Garlic
  • 1 cup White wine
  • 0.5 cup Chicken or vegetable broth
  • 3 tablespoons, drained and rinsed Capers
  • 2 tablespoons Lemon juice
  • 0.25 cup Heavy cream
  • 2 tablespoons, finely chopped Fresh parsley
  • 0.25 teaspoon (or to taste) Salt
  • 0.25 teaspoon (or to taste) Black pepper

Directions

Step 1

In a medium saucepan, heat the butter and olive oil over medium heat until the butter is melted and starts to bubble.

Step 2

Add the finely chopped shallot and sauté for 2-3 minutes until softened and translucent, stirring occasionally.

Step 3

Add the minced garlic to the pan and cook for 30 seconds until fragrant, being careful not to let it burn.

Step 4

Pour the white wine into the saucepan and increase the heat to medium-high. Scrape the bottom of the pan to deglaze and let the wine simmer for 4-5 minutes until reduced by half.

Step 5

Stir in the chicken or vegetable broth and capers, and continue to cook for another 3-4 minutes to infuse the flavors.

Step 6

Lower the heat to medium, add the lemon juice and heavy cream, and stir well. Let the sauce simmer gently for 3-5 minutes, stirring frequently until it thickens slightly.

Step 7

Season with salt and black pepper to taste, and stir in the chopped parsley.

Step 8

Remove the saucepan from the heat and let the sauce cool slightly. Serve immediately over your favorite dish, or store in an airtight container in the refrigerator for up to 3 days.
