Ingredients

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 2 tablespoons capers (drained)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon lemon zest
  • 1 cup chicken broth
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 0.5 teaspoon paprika

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the chicken thighs dry with paper towels and season both sides with salt, black pepper, and paprika.

Step 3

In a large oven-safe skillet or cast-iron pan, heat the olive oil over medium-high heat.

Step 4

Place the chicken thighs skin-side down in the skillet and sear for about 4-5 minutes until the skin is golden and crispy. Flip and cook the other side for 2-3 minutes, then remove the chicken from the skillet and set aside.
