Ingredients

  • 12 oz Capellini pasta
  • 12 oz Salmon fillet (skinless)
  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 1 Shallot (minced)
  • 2 cloves Garlic (minced)
  • 0.25 cup Vodka
  • 1 cup Heavy cream
  • 2 tbsp Lemon juice
  • 1 tsp Lemon zest
  • 2 tbsp Fresh dill (chopped)
  • 0.25 cup Parmesan cheese (grated)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the capellini according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

Step 2

Pat the salmon fillet dry with paper towels and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the salmon and cook for 3-4 minutes on each side, or until cooked through and flaky. Remove the salmon from the skillet and set aside.

Step 4

In the same skillet, add the remaining olive oil and unsalted butter. Once the butter has melted, add the minced shallot and garlic. Cook for 2-3 minutes until fragrant and softened.

Step 5

Carefully pour in the vodka and let it simmer for 2 minutes to reduce slightly.

Step 6

Lower the heat and stir in the heavy cream, lemon juice, lemon zest, dill, and red pepper flakes (if using). Simmer gently for 2-3 minutes, allowing the sauce to thicken slightly.

Step 7

Flake the cooked salmon into large pieces and add it to the skillet. Stir gently to coat the salmon in the sauce, being careful not to break it apart too much.

Step 8

Add the cooked capellini to the skillet and toss to combine, adding reserved pasta water a tablespoon at a time if needed to adjust the sauce consistency.

Step 9

Sprinkle with grated Parmesan cheese and additional dill for garnish. Serve immediately and enjoy!
