Ingredients

  • 12 oz Angel hair pasta (Capellini)
  • 2 pieces Boneless, skinless chicken breasts
  • 4 tbsp Olive oil
  • 4 cloves Garlic cloves, minced
  • 2 cups Cherry tomatoes, halved
  • 1 medium Zucchini, diced
  • 1 large Red bell pepper, sliced
  • 2 cups Baby spinach
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Grated Parmesan cheese
  • 2 tbsp Fresh parsley, chopped
  • 1 medium Lemon, juiced

Directions

Step 1

Bring a large pot of salted water to boil and cook the angel hair pasta according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water and then drain the pasta.

Step 2

While the pasta cooks, season the chicken breasts with salt and black pepper on both sides.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes per side or until fully cooked (internal temperature should reach 165°F). Remove the chicken from the skillet, let it rest for 5 minutes, and then slice into thin strips.

In the same skillet, add the remaining 2 tablespoons of olive oil. Add the minced garlic and cook for 1-2 minutes until fragrant.

Remove the skillet from heat and stir in the lemon juice for a bright, fresh flavor.
