  • 4 whole Mandarin oranges
  • 100 grams Sugar
  • 2 tablespoons Cornstarch
  • 500 milliliters Whole milk
  • 3 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 200 milliliters Whipped cream
  • 4 leaves Fresh mint leaves

Directions

Step 1

Peel the mandarin oranges and separate the segments. Remove seeds and any membranes, if present. Reserve a few segments for garnish.

Step 2

In a medium saucepan, whisk together sugar and cornstarch. Gradually add the milk, whisking constantly to dissolve the sugar and cornstarch.

Step 3

Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring frequently to prevent lumps.

Step 4

In a small bowl, whisk together the egg yolks. Gradually add a small ladle of the hot milk mixture to the yolks while whisking continuously to temper them.

Pour the tempered egg yolk mixture back into the saucepan and stir constantly over low heat until the mixture thickens to a custard-like consistency.
