  • 2 pieces (6 oz each) Cod fillets
  • 4 slices Rye bread
  • 4 slices Swiss cheese
  • 0.25 cup Thousand Island dressing
  • 0.5 cup Coleslaw
  • 2 tablespoons Butter
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 2 tablespoons Vegetable oil

Directions

Step 1

Season the cod fillets with sea salt, black pepper, and lemon juice. Let the fish sit for 5 minutes to absorb the flavors.

Step 2

Heat the vegetable oil in a non-stick skillet over medium heat. Add the seasoned cod and cook for 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove the cod from the pan and set it aside.

Step 3

Butter one side of each rye bread slice. Place two slices, buttered side down, in a separate skillet over medium heat.

Step 4
