  • 8 cups chicken or vegetable broth
  • 14.5 ounces canned diced tomatoes
  • 1 large bunch kale, stems removed and chopped
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned white beans, drained and rinsed
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.25 teaspoons red pepper flakes (optional)

Directions

Step 1

Heat the olive oil in a large Dutch oven or heavy pot over medium heat.

Add the sliced chorizo or linguiça sausage and cook until browned, about 5 minutes. Use a slotted spoon to transfer the sausage to a plate and set aside.
